Food freezing/safety question

Food freezing/safety question
I'm thinking of making turkey meatloaf 'cupcakes' and freezing them. Would I have to reheat it, or could I thaw them and eat them cold? I think they'd be a great "to go" food, if I can work out the logistics.

I agree. You wouldn't hesitate to eat them straight out of the refrigerator, so there's no reason why freezing them would make them less safe. (IMO).

Arlene, it was your recent recipe that galvanized me to get this organized. I plan to take some with me, frozen, when I have a long day out of the house, and eat them while they're still quite cold (they'll be like edible freezer packs, too). I agree about the flavor when cold - thanks for the reminder to take that into account.
I'm not sure where I got the idea of 'meatloaf cupcakes,' but it seems like an MC/Paleo/Primal-friendly solution to my current grab-n-go dilemma. I have some recipe tweaking to do, but meat recipes are so much more forgiving than baking, I'm optimistic.
