I am avoiding soy because if my Enterolab results, but just read that people with soy allergies don't have to avoid soybean oil or soy lethicin because the soy proteins are destroyed by processing. Is this true?
Also, I read something here about having to avoid all legumes if you are sensitive to soy. Is this also true?
I know someone here will have some answers for me.

Theoretically, it's true. In the real world, unfortunately, most of us who are sensitive to soy, find that the exclusion does not hold true for us. I found what Tex says to be true, unfortunately. I can't tolerate the soy oil or lecithin in any amount. I had also read what you did, but for me, at least, it wasn't true. So many times I would read something and get excited, only to have my hopes dashed. So I know how you feel.
I recall reading that some with dairy intolerance could tolerate sheep or goat milk/cheese and rushed out excitedly to buy some. Alas, they made me sick. This has happened to me with so many products over time.
Soy sensitivity sucks. I agree with Joe - it can be harder to avoid than gluten - and make you sicker. Not too long ago (once labelling laws went into effect) I found out that the "natural flavors" in Bigelow teas were made from soy. I was also having problems with Sunbutter (sunflower seed butter) and think it was due to the added tocopherols. Someone here mentioned that they are soy-based. Sure enough, when I found another brand without them, I have done fine.
