I found some beautiful strawberries yesterday. I was looking for a GDSE free shortcake when I came across the gluten free goddess's strawberry chocolate chip scones. OMG! They are to die for! If you are looking for a good recipe for fresh strawberries, this is it! Here is the link:

I have to get acquainted with that egg replacer. That shortcake looks beautiful! Thanks for sharing the recipe. I'm kind of a one-trick pony at the moment - all blend-and-freeze treats, all the time ;)

Sara - The egg replacer works well for recipes that call for 1-2 eggs. Any more than that, I've found it causes the recipe to be a little gritty and crumbly.

I probably shouldn't have fired up my oven in this 100 degree heat. My air conditioner is having a hard time keeping the house cool this afternoon. I've got to say, though, the scones were well worth it. I have wrapped and frozen five of them to eat later. Even my gluten free family thought they were delicious.

Denise, they sound yummy!
Did you use the muffin mix or make your own? I've had some "issues" with some of the mixes and I think it is tapioca flour that is the problem.
I have ground my own and haven't noticed the same off taste.

Deb - I did use the Gluten Free Pantry mix and didn't notice an aftertaste at all. I'm sure it could be made with your own mix. This is the first time I have used any of the GFP mixes and I will definitely be using them more often.
