Two questions!!
What is everyones experience with juicing. I used to drink fresh carrot juice with a little apple in it for flavor and sweetness, but my juicer has been stored away for a while now. I have read it is suppose to be very healthy for you but not sure what it will do with my LC?
I also used to eat lots fresh sprouts that I would grow myself in jars on the counter, broccoli sprouts and such, and idea of what that might do with my LC?
These are both very healthy foods, but don't want to upset the "apple cart" so to speak?
I am looking for a way to stop eating so much refined foods and sugar which I crave, I know eating more protien will solve some of that?
Opinions and fact please?
Thanks in advance.

Sprouts would probably be OK, so long as you don't overdo it - no wheat or soybean sprouts, though.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Alfalfa is a legume, of course, which might be a problem if you're sensitive to soy. If I recall correctly, though, young plants shouldn't have any significant amount of storage proteins, so they might not be a problem.
I would think that juice blend should be pretty safe.

You could try cabbage. That's an old remedy for ulcers. When my husband feels the twinge of an ulcer, he goes out and gets cabbage to juice. About 6 oz. two or three times a day for a few days does the trick. Of course, it tastes a little like liquid menthol, and the smell is enough to drive everyone out of the house and lasts for hours. Although in some cases, that could be considered an added perk, I suppose...
