Today I made gluten free bread from the glutenfreegoddess.com website. I didn't have a bread machine, so used a ceramic loaf pan as she recommends. It came out great. Better than any I have purchased. It smelled like regular yeast bread. I did use an egg in the recipe. So for lunch, I had homemade winter squash apple soup with a piece of toasted bread and it was so good. I couldn't believe it. The soup was a recipe from Dr. Weil's website. The only change I made with his recipe was to strain the soup, I have a problem with textures I guess. My DH did not strain his. I actually haven't had any bread for a couple of months. I have tried the rice and corn tortillas, but just didn't like them. I gave up on bread until today. I have been so happy all afternoon.
Hmmm, I think I'll try some chicken or tuna salad on the bread or maybe toast it and put some jelly on top like the old days, there is just no end to what I can do now.

I'm so glad you are enjoying your bread. I couldn't face living without bread and have been playing around with recipes since I was diagnosed. I found a good recipe I can make in the bread machine but it really needs to be toasted. If I make a sandwich to eat later, it crumbles and falls apart as you try to eat it. It does make a perfect grilled sandwich or just toast with jam. I'll check out the website where you found your recipe and give it a try. Thanks for sharing.

I was inspired by Nancy's e-mail about winter squash soup and fresh bread to try a recipe from "Living Without" magazine. It called for butternut squash, apples, carrots, grated ginger etc. and was delicious. It was a real dinner, not a substitute for something that I used to eat. The bread had just come out of the bread machine and was so good, still warm. Thanks, Nancy for the inspiration.
I'm going to try another bread recipe, still trying to find one that won't crumble when not toasted.

Wow....I am so glad to here that other people are making there own bread. My husband calls me the mad scientist in the kitchen.
Before MC I was a bread addict I could eat a whole loaf of italian bread by myself ( I would get so sick after but it was so worth it....well maybe sometimes). So now being on a Gluten free, soy free, dairy free and sugar free diet I thought I would never be able to have bread again. I have learned how to make my own bread, biscuits, muffins, rolls and cookies that are really good. I get my recipes from a site called " Comfy Belly" and "SCD" (Specific carbohydrate diet). Most of them are very very good...there are a few that I must say went into the garbage! If you have a nut allergy these sites wont help you. Most of the recipes are made with almond flour or coconut flour.
