Anyone?

I so want to make SOMETHING I can eat. I can't find anything that uses the few foods allowed in my diet. I don't know what substitutions I can make. I found a bread that uses oats, but combined with rice. If not rice, soy. If not soy, corn. There is also buckwheat bread, but I don't know whether I can tolerate it.
There doesn't seem to be anything that uses the flours I can have. I don't have potato flour. After eating "latkes" made ONLY with potato flour (without grated real potato in them) I know I don't like the consistency, at least for "latkes". I don't know about bread.
I have to go shopping AGAIN (out of tea) so I will get it if a recipe is available.

I don't know what upset me in the bread I tried to make last week. I used a mix of flours. Who knows what it was? It also didn't work. It didn't bake through, no matter how long I left it in the oven.

It's cold and rainy today, so a good day for baking. I would be so happy if someone would suggest something I can have.

Lesley,

When you're asking for something such as recipe suggestions, you really have to list the food ingredients that you want to avoid, because everyone here has her or his own food-sensitivities to deal with, and they can't very well be expected to remember everyone else's sensitivities.

OK. I need to put this on my profile. I am going to do the MRT so I will probably have more.

No rice, soy, gluten, corn, dairy, eggs, cashew, almond.

I CAN have oats in moderation.

No chicken, no tuna, pork - intermediate, so I don't know if a little is OK.

Any ideas?

Dear Lesley,

Can you eat quinoa? I bought a box of Ancient Harvest brand Quinoa Flakes.There is a recipe for banana-quinoa muffins that calls for quinoa flour, quinoa flakes, honey, baking powder, baking soda, salt, ripe bananas and eggs.

I haven't made them, so I don't know how they taste. The quinoa flakes as a hot cereal was quite nice.

I get coconut milk and coconut oil at my local Kroger. I buy Goya brand coconut milk in cans (no added guar gum) for cooking and LouAna brand coconut oil.

I hope you soon find some things that you can eat, so you can have a change from meat and potatoes.

Hi Martha,

I don't know about quinoa. Haven't tried it yet. But I can't have eggs. If I could baking would be SO much easier. I wonder if egg substitute would work?

The local Ralph's (Kroger's) only has one brand of coconut milk, which has both guar gum and xanthan gum. I looked for it yesterday. I saw palm oil there, but not coconut oil.

I found I can eat So Delicious ice cream! I am SO excited! I started with a very little bit. Now I am in danger of eating it ALL!

I will get the cereal to try. I would LOVE another hot cereal for breakfast.

I wonder if it would work with egg substitute? Why is xanthan gum needed if eggs are there to bind it? Any theories?

Any gluten-free bread recipe I've seen calls for xanthan gum because eggs alone aren't enough to bind it together.

If I were you, I would start with making muffins so you get used to GF baking. Muffins are sooo much easier to make than bread.

Yesterday's quick bread was pretty easy, Gloria.

I have not tried a yeast bread yet. I used to bake bread (no bread machine) every week many years ago, in the days when I was cooking and baking for a family.
I need to use your test to see what I react to, and then figure out the substitutions. It will take me time. Not tonight!

Lesley,

I sense that you are beginning to come to grips with your MC. You seem have changed from fighting against this to trying to work within your restrictions. Almost all of us have had to make the same transition. We really go through the five stages of grief: denial, anger, bargaining, depression, acceptance, which are probably very familar to you.

I am so impressed with your determination and ability to stop taking Prednisone. You've been through the ringer; that's for sure. I have no doubt that you will do whatever is necessary to get better.

Gloria. Thanks for that! I nearly missed this message. Don't know why. I found it looking for your post on testing flours for sensitivity.
I know the stages well. I really was angry, but I didn't bargain. I was more shocked when I saw my list.
Now I am trying to figure out what will help me to feel well..not again, but for once.

Can you point me in the direction of your tests again? Please.
