Hi Robin,

Well, we don't actually add jalapeños to French fries, but a lot of us tend to munch on them while we're eating many other things, including French fries. Jalapeños go well with foods that contain fat, (IOW greasy foods, LOL), because the grease helps to keep the jalapeños from biting back. :lol:

Thanks for the info - I don't eat French fries very often, but I'll have to try that the next time I get a chance.

Non-cow cheeses are an interesting topic. In general, most of us can't handle them, but a few people who are sensitive to cow's milk casein are able to tolerate cheese from other milk sources. The Enterolab casein test is specific for cow's milk, so it doesn't provide any information on any other types of casein, so the only way to find out is by trial and error. I read somewhere that in California, (and possibly a few other states), camel's milk is even available in some markets. :shock:

Yes, tapioca comes from the manioc root, so it's gluten-free, but unfortunately, a few of us are sensitive to it. With any luck at all, though, you should be able to tolerate it, but you may need to handle the first time you try it, as a trial and error test, just in case. Most commercially prepared tapioca contains milk, of course, so keep that in mind if you should ever decide to buy it ready-made.

The recipe for the zucchini bread, which is out of the oven now, is from a gluten free recipe site, and has tapioca flour. I haven't tried it yet. I am a bit nervous because of my reaction to the last baking experiment I did. I will though.

no problems, nor with the chicken or the french fries or the diet coke. Although, the cola gave another unwanted side effect I could not sleep. Since I have changed to decaf coffee, anytime I drink something with caffein in it, I have a very strong reaction. Nothing dramatically, I only can't sleep.

Over time I've learned a dirty little secret about "dedicated" restaurant fryers. When I ask waiters or managers, at first they say yes, it's a dedicated fryer. Then they come back to tell be the oils from all the fryers are combined at the end of the day and re-used the next day, so even a dedicated fryer can have contaminted oil in it. Sigh. I only eat fries from Elevation Burger. Love that place.

That's what I always suspected, but I was never sure, because I knew that they process their oil regularly, by at least filtering it, and it doesn't make sense to try to do that one fryer at a time. Thanks for confirming my suspicions.

I'm sure they think that filtering the oil removes all the gluten, but it doesn't, of course.

Yes, now I recall they do this to filter the oil. Thanks Tex. So the only places to eat safe fries are places that only fry fries. Five Guys and Elevation Burger are the only ones I know of. I would be interested in learning how Chick-Fil-A deals with their fryer oil.

Hi Tex,

Thanks for the information about other source of milk products. Well I just experienced that I can NOT have goat cheese! :sad: I have been dairy free for over 10 years, what was I thinking!

As for the tapioca I will be making it myself, I don't do very well with any "store bought ready made stuff". So I will be making it from scratch.

Thank you for that insight about the reuse of oil! YUK! When I decide to eat a french fry it will only be made by me. With good never used oil!
