Well, we don't actually add jalapeños to French fries, but a lot of us tend to munch on them while we're eating many other things, including French fries. Jalapeños go well with foods that contain fat, (IOW greasy foods, LOL), because the grease helps to keep the jalapeños from biting back.

Non-cow cheeses are an interesting topic. In general, most of us can't handle them, but a few people who are sensitive to cow's milk casein are able to tolerate cheese from other milk sources. The Enterolab casein test is specific for cow's milk, so it doesn't provide any information on any other types of casein, so the only way to find out is by trial and error. I read somewhere that in California, (and possibly a few other states), camel's milk is even available in some markets.
Yes, tapioca comes from the manioc root, so it's gluten-free, but unfortunately, a few of us are sensitive to it. With any luck at all, though, you should be able to tolerate it, but you may need to handle the first time you try it, as a trial and error test, just in case. Most commercially prepared tapioca contains milk, of course, so keep that in mind if you should ever decide to buy it ready-made.
