Wow, Sheila - that's very much not my experience. I picked totally different comfort foods.

Can you tolerate sweet potatoes? They're a very colorful change of pace, very easy to make in a hurry, and filling...

Sheila,
can you bake some apples with cinnamon and brown sugar? They come out lovely and sticky, and brown.

And I second the sweet potatoes. Make chips. They are delicious and colorful.

Salmon is pink.

Chicken can be roasted until the skin is golden and crisp.

Make a BBQ sauce (with friendly spices) and marinade the pork chops in them. Then grill them. They will be a gorgeous color.

Can you eat bacon? That isn't white. I would LOVE some.

You can caramelize bananas. They are delicious.

There is a lot of color to be had depending on how you cook things.

Sweet potatoes:
Baked - they are great hot AND cold.

Mashed with a bit of coconut milk. Delicious

Candied - sliced and parboiled. Bring brown sugar and water (no idea of the quantities. I cook by feel) to the boil and pour them over a the slices laid out in a pan and bake in the oven till gooey and sticky.

Chips - slice thin, sprinkle with olive oil and salt and back till changing color and crisp. You'll get the hang of it after one time. they are also great.

And I often do sweet potatoes at breakfast, with leftover dinner or turkey bacon or - ground meat, as a hash - I peel them and cut them into small-ish dice, and they cook in a jiffy, in a saucepan with a splash of water and a tiny bit of coconut oil. By the time I have the cats fed and the coffee made, I'm sitting down to a first-rate (orange!) meal.

If you can handle lamb, browning it and cooking it with sweet potatoes is delicious. Lamb and sweet really go together well. (I used to make it with lentils, but that must be out for now. Pity, I LOVE lentils.)

I have been having difficulty eating dinner foods for breakfast. It's not easy for me either. I find sweet potato chips are the easiest, for me at least. A couple of hours after I can eat meat or fish.

Try yams, not sweet potatoes. They are the really tasty ones. Sweet potatoes are very dry, and as a first step won't excite you. Then think pumpkin, only more so. Creamier, sweeter, not stringy. Give it a try. You have nothing to lose.
