Robin,
If caffeine was a problem for someone before he or she developed MC, then it will still be a problem after the advent of MC. If caffeine was not a previous problem, then it won't be a problem after MC. The official medical opinion is wrong, on this one. This is another case where the "experts" just assumed that it should be a problem, based on the fact that caffeine is a secretagogue, and MC is marked by secretory diarrhea, but only a limited connection exists, because while the endocrine system can definitely affect the symptoms of MC, it is not the primary cause of secretory diarrhea, and caffeine itself seems to have only a minor to negligible effect on MC symptoms.
They're right about the NSAIDs, of course.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Yes. It works best, though, if taken with a meal, or at least a snack. And it should be taken ASAP when you feel a headache coming on, because once the headache becomes fully-developed, acetaminophen is not very effective at controlling the pain. I always had good results with it, as long as I took it that way.
