not with no corn, rice AND eggs. I was looking at Passover cakes. They all need eggs, matzoh meal or something. If I am in Israel it's going to be really tough because all supermarkets go kosher for Passover. You can't get anything you haven't stored before, though it's much better nowadays than it was in previous years.
Don't give up Lesley. It takes awhile for these dietary changes to become second nature and for your bowels to ease up. The last time I was feeling like you are, I was only able to afford 10 days of Entocorte pills but it was enough to stop me running for the commode. Then I got back to eating off my "safe foods" list. I only test one new edible at a time. My two steadfast rules are:
1/ no roughage 2/ no gluten.
I had my first Thanksgiving without upset and so I really was thankful. My cravings for foods I can't have are lessening in intensity.
When I read the recipes on this site I see that some people eating foods I consider "roughage", like strawberries or blueberries with the pits, chopped parsely & other spices,
salsa with it's tomatoe skins, etc. & I'm wondering will I ever be able to add things like that in to my diet? Does anyone know?

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

What Tex reports has been true for me. It was really hard to grasp that salad was not my friend. I can eat a lot of fruits/veg now, but it really helped when I took time off, and just had things like well-cooked carrots, in modest amounts. I used the opportunity of my husband's recent travels to go "back to basics" and it made a difference.
My other biggest issue, in social eating especially, is too much variety. I've always loved tapas, dim sum, and any situation with lots of different dishes in small quantities. Even with my totally controlled Thanksgiving, the sheer variety of dishes and ingredients was a little hard to take. I didn't have D, cramping, etc. kinds of symptoms, but I could feel the difference.
Nonetheless, it's nice that you can be optimistic about salsa!
