This soup is simmering on my stove as I write, and I thought maybe it would work for some of you. I'm guessing it is easily tweak-able. This comes from Yankee Magazine, and is a DELICIOUS Portuguese Kale soup.
Ingredients:
1T olive oil
2garlic cloves
2medium size onions, chopped

1pm linguica (this is a spicy Portuguese sausage. The recipe says if you can't find it, kielbasa can be substituted, but if you can get your hands on Spanish products, I'd go for chorizo over kielbasa). Slice the linguica/sausage.
4 cups chicken broth (I always end up adding more)

1pm fresh kale, washed stems discarded, shredded into small pieces

1can Campbell's bean with bacon soup, plus one can water ( the substitution would be 1 can of white beans plus 2 additional cups of chicken broth)

2 large potatoes (russets or your preference)

Kosher or sea salt
freshly ground black pepper

In a large soup pot over medium-high heat, add oil and cook garlic, onions and linguica slices until onions are soft. Add 4 cups chicken broth and kale. cover and let kale cook down, stirring occasionally.

Add bean soup and water (or beans and broth). Simmer about 5 minutes. add more water if soup seems too thick. Add cubed potatoes. Simmer, covered, 20-30 minutes longer, until potatoes are soft. Season to taste with salt and pepper.

Yields 8 servings. Is even better a day or two later!

In my former life, I served crusty bread with it, but this soup is hearty enough without it.

Now, why did my iPad auto-correct lbs. to pm? That's 1pound each of the kale and linguica or other sausage.

HI Suze,

I make this soup all the time. I was born in Fall River, Mass and I am Portuguese/Amercan Indian/Canadian French. It is very good. You can substitute the linguica for hot sausage, procuitto, even chicken, just add red pepper flakes for the kick of heat. Kale is so good for you so I make it a lot of different ways. Now since I cant have beans, I use rice or little white new poataoes. OK now I want a bowl! Where do you live? Save a bowl for me!

Hi Robin,
I live in central CT, where there are lots of Portuguese folks and restaurants--it is one of our favorite cuisines! Good for me, with meat, potatoes, rice, seafood as a core component. But, DAMN, I miss that Portuguese bread!

Just about everything in that recipe - I can't eat! Pork, beans, kale, rice, chicken broth and so on and so forth. *sigh*.

Its funny you meantioned the Portuguese sweat bread. I use to make it all the time because here in NY the have one buts is not like the one from Mass. My son has friends in RI and he just brought home some along with chorizo, linguica and pickled onions. I was so upset that he brought home the bread. My husband was like just try a piece your on all this medication, how much can it hurt! Well I tried a piece....OMG! Twenty minutes later I had pain in my stomach....it was worth it though. Growing up we had it toasted on Sunday morning before church. AHH the good old days when we could eat anything.
