I got my new (refurb'ed) $11 ice cream maker today. I cleared out my freezer to make room for the bowl. I STILL have stuff I can't eat in there. Chicken, turkey, shrimp wontons...I gave away enough food to feed me for a year!

I have so much kitchen (and other) equipment to get rid of. I wish I could have a yard sale.

and I have just made a new batch of beef broth (in the making since yesterday afternoon :roll: ) and now I have a whole sink full of dishes again. And there is STILL nothing to eat......

Reminds me of when I was first married, and went out and bought what seemed like the entire grocery store, and when I got it all home, I discovered that we had nothing to eat for lunch. I put away all the baking powder, sugar, salt, and oil, and had to go back and buy stuff to actually eat. :smile:

When you have MC your refrigerator is often full of "ingredients" instead of food. If we want to eat we have to make something from scratch. I love to cook and at this point there are days that I just hate food. It is such a pain in the a%$ to always being cooking something just to be able to eat. I make bread with a bread machine made to accomodate GF bread, homemade hamburger rolls, soup for the freezer, chicken burgers for the freezer, coconut milk ice cream, GF brownies, GF zucchini bread. I eat the same damn breakfast every day, GF Chex with almond milk. I have so many kinds of flour it takes up the entire door portion of one refrigerator and has expanded to the shelves as well. I have learned to substitute polenta for pasta in some recipes rather than cook 2 kinds of pasta so GF doesn't have to suffer GF pasta. I made a recipe 2 weeks ago that took forever, made a huge mess, tasted so bad it went directly into the garbage. Welcome to MC, Lesley.

Sheila, How do you subsitute polenta for pasta? I bought polenta once and ended up putting it in the compost bin because it tasted so bad. Hopefully, I just don't know how to season it or prepare it so it's edible. I LOVE pasta, but you're right about cooking the two kinds- it's a pain. The corn based pasta isn't much to be desired. I like the rice pasta better but sometimes a little variety is better than nothing. I like the polenta idea because it's heavier and it's satifying to feel full when the plate is empty.

Sheila,

A couple of weeks ago I put down my experiences with shopping, cooking and cleaning up since MC, and touched a nerve. The thread went on and on. It was an education.

I have to get a bread machine. And figure out recipes that are gluten, corn, rice, eggs, dairy, soy, almond, walnut, cashew free. I have nowhere to keep all these kitchen gadgets.
I am now looking for recipes for ice cream that avoids all the above. Share?

Every time I think I have all the flours in the world a recipe calls for one more.

You keep your flours in the fridge? You must have a massive one.

I wish there was a cereal I could eat. Breakfast is the worst meal of the day for me.

Before MC I had room in my kitchen cupboards and fridge. Now I don't.

I love polenta, but can't eat it anymore.

Deb, I buy polenta already made, sold in the produce area of my supermarket. It is a cylinder wrapped in plastic. I slice it about 1/2 " thick, place it on an oiled cookie sheet, season with salt and pepper and either put about 1 T. of tomato sauce topped with shredded mozzarella and/or parmesan and bake @ 350 for 20-25 min. or season with salt and pepper, top with cheese and bake the same. If I have a separate sauce, i.e. sausage, roasted peppers, onion & diced tomatoes, I put the sauce on top of the polenta. There is a plain polenta and one with sun dried tomatoes. I usually get the one with sun dried tomatoes. It is a good alternative to pasta.

Lesley, I have a recipe for Chocolate Almond, chip coconut ice cream with a sugar free option. The first time I made it I put it into a large,flat plastic container and it was murder trying to chop out a piece, very hard. This time I put some into ice cube trays and some into very small plastic containers. Both worked well and the ice cream didn't get too hard. Here is the recipe I've made.
4 C full fat coconut milk.
1/4 C- 1/2 C cold hazelnut coffee
3/4 C cocoa or carob powder
1/2 C sweetener. I use sugar
1 T arrowroot or cornstarch
1 tsp vanilla
1 tsp almond extract
1/4 tsp salt
3/4 C mini chocolate chips (soy free)
3/4 C chopped almonds. I haven't added nuts yet.
Follow your ice cream maker directions. I have the Cuisinart Ice Cream and Sorbet maker. Freeze the container for at least 24 hours. Add the coconut milk, coffee, cocoa powder, arrowroot or corn starch, extracts and salt in your processor or mixer. Stir in the chips and nuts. Refrigerate for at least 2 hours. Add mixture to ice cream maker and follow makers directions.
The original recipe (which I altered somewhat) came from www.wholenewmom.com/recipes or google coconut milk ice cream.
I am fortunate to have 2 refrigerators in the house or I would not have room for all of the "specialty" flours and stuff needed to make bread etc.
Breakfast was my biggest problem, too. I have eaten an everything bagel for breakfast for years and was miserable for a long time until I got used to the chex cereals. I don't really enjoy it but it is filling. I am thinking about making the GF Jones sausage patty and putting it on GF bread with some Swiss cheese. I like breakfast to be easy and that isn't. I make DH a full breakfast since that is the one meal he seems to enjoy.

Thanks Sheila. I have the Cuisinart now too. There are a few things I need to get to make the ice cream.

I wish I could eat polenta and cheese.

I can eat some oatmeal, every now and again. My problem is C. I don't know whether, if I having serious C, if it's also caused by the MC.

You are a better wife than I am. I can't make DH something that I used to enjoy and no longer can eat, especially scrambled eggs. People ask me if it's too tempting. No, I'm not tempted, it just makes me overwhelmingly sad. I was in a building today where the aroma of fresh baked bread was in the air. I can watch someone eat bread all day long and not be bothered, but the aroma of it....that's another matter.
