Okay, forum friends,
Breakfast today was the same old GF cereal and coffee. Lunch was Arby's roast chicken and bacon club (both GF), without the cheese and bun, of course, with lettuce and tomato, and a few rice chips. Dinner was a salad with grilled chicken, lettuce, tomato, carrots, green pepper, and tomato, with GF dressing. 2 1/2 hours after dinner, I was blown up like a balloon and had belly pain. No D (yet).
What's your best guess? I have gotten to the point that raw veggies usually don't bother me unless I'm already reacting to something. I can't decide if it's the Arby's sandwich, or (given my violent reaction to potatoes) if the double dose of green pepper and tomatoes, two meals in a row, might have been enough to cause a reaction, even though I haven't nailed down a general nightshade intolerance before now. I'd appreciate your insight!

I was diagnosed just about a year ago and have not had a salad yet. I am afraid of anything that isn't well cooked. The acid in the tomatoes may be a problem, at least it is with me and I eat only very small amounts at a time. Those raw veggies may be bothering you and green peppers are very hard to digest even on a healthy digestive system. Most people here say that lettuce is the worst, especially iceberg. I haven't tried it yet so I don't know. I'm going to wait until I'm really healed before I try any those. But, that's just me. I only eat steamed veggies, then sometimes saute them to get extra flavor. I am slowly adding different veggies. Last week I added brocollini, which I love and also had 2 strips of bacon one day. You have to take it real slow.
I had a hard time with breakfast at first. I now have GF cinnamon rice chex cereal, pancakes or waffles made with King Arthur's GF all purpose flour. They are very good. I'm the only one eating them so the waffles I make and freeze for another day. The pancakes, I put the batter in the frig and eat it for a few days until it's gone. It doesn't bother me to have it for several days. If you can tolerate fruit, you can have that on the waffles.

I agree with Nancy - many "normal" people can't tolerate green peppers. Remember that green peppers are not ripe, and so they present different chemical issues than ripe fruits/vegetables. My second guess would be tomatoes. Of course, eating out is always a wild card, because we have no control over what actually happens in the kitchen there.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
I would suspect cross-contamination - or maybe there's something in the GF dressing (soy?). I'll ask for a lemon wedge instead of dressing sometimes, and make my own at home (which is a thousand times better than bottled dressing, and so easy!).
