I too love my starches! YUMMY! I use to love to make my own pasta, it tasted so much better than store bought. But I have to say since changing my diet I really don't miss them. I was never a sweet eater either, so for me to give up sugar was easy. I would just like to get back to eating my vegetables al dente instead of mush, that bothers me.

Oh Sara....those meat cupcakes have been a huge hit in this house! I have made them with beef, turkey and veal. When there are none in the refrig. my hubby gets upset. He has been snacking on them too. So thank you again!

Why did you give up the legumes? They just don't agree with you?
I eat a ton of natural peanutbutter because it makes me feel full and has taken the place of my desserts. Plus its a quick fix when it's just sitting in the fridge ready to eat with no prep time. In some of my browsing on the site I've come across hystamine discussions and it's peaked my interest. I worry about the foods that I"m currrently eat causing problems in addition to the gluten and dairy. I'm still working on the Enterolab testing route and have decided it's probably best to take one step at a time and wait for those results before I start looking at additional sensitivites. I still have eye burning/pain and puffy feeling around the eyes that feels like an allerigic type reaction and wonder if there's a corralation between the two. Many of the hystamine foods Tex recently posted that should be avioded are on my daily menu.
My mother also has, what I believe to be, reactions to some hystamine rich foods. I know she has coughing spells when she eats apples and sometimes constriction of the throat and I think she mentioned issues with bananas too. I just don't want to jump the gun when I'm just starting on the road to figuring things out.
I have to call my GI at the end of the week to find out what my next tapered dose of Prednisone will be. I've got a strong feeling that once I go under the current 20mg the D is going to return then I'll have that to figure out what to do.

The eye symptoms that you describe are probably due to allergic reactions, as you suspect. You could be reacting to something in the air, or something in your diet. Have you tried an antihistamine? If it's an allergic reaction, an antihistamine should help.

I just realized I never answered your question - I dropped legumes because I thought they were a likely risk for me. I use nut butters a fair amount, and don't miss peanut butter. I'm eating a basically 'Paleo' diet, which excludes grains and legumes, and focuses on meat, fish, vegetables, fruit, some nuts, oils such as olive oil, coconut oil, avocado oil... and very little added sweetener (real or artificial). I like the simplicity of the 'rules' very much, and I feel good eating high-quality protein (sigh, former vegetarian that I am), and am in danger of becoming a bit of a 'true believer' that this is a wonderful way to eat and more people should explore it (not just us MCers)...
I think your observation about coughing and histamines is a good one. That's been an on-and-off symptom for me, for many years. My mother had it as well, and so did her aunt. I think you're also smart to take this one step at a time. It's a process, no matter how you go about it!
Robin, I'm so glad the cupcakes are a whole-family hit. My husband named them, and the timing couldn't have been better, because a friend's kids fell in love with this idea - shortly before learning that they're gluten sensitive. So they already had a 'favorite new dish' in the house!
