I have a problem when making ice cream. The coconut milk has a strong taste that seems to overpower other flavors. I just made mango ice cream with frozen fruit. It is a lovely pale orange flavor and very nice, but the flavor of the mango doesn't really come through. Same thing with strawberries.
I always add vanilla to the ice cream, and a few drops of lemon essence and/or lime to give it a tang.
But basically all flavors taste more or less the same, hard as I try to differentiate between them.
My favorite vanilla doesn't work at all.
Any ideas?
