If they still have the slides, (which they probably do), they can re-stain them and do a mast cell count.

Yes. One can also have ME along with celiac sprue, Crohn's, or UC.

I'm not sure, since no one knows exactly which mediators the MRT responds to, but I'm guessing that the test should indicate at least some foods that cause mast cell responses.
