can people add back their intolerances once they've acheived remission if they were not tested to have antibodies against those foods? how soon can you try to add them back?

I tested positive through Enterolab for gluten, casein, soy (low teens) and yeast. I only gave up yeast (bread) in the first few months. I never fully gave up soy - I still had GF soy sauce, soy oil, and soy lecithin in dark chocolate or baked goods. I did give up most salads, peppers, spicy foods, coffee, citrus and fibrous raw veggies in the first year, and only ate them occasionally after that. It took 2 years to acheive remission without any meds, but now I enjoy salads, raw veggies, coffee, dark chocolate, spicy foods and citrus with no tummy troubles. Granted, I'm not having perfect normans every day, but I feel I'm just as normal as anyone without MC -- no discomfort, no bloating, no urgent D, no C. I am still very careful about avoiding all gluten, but less worried about trace amounts of casein.
