I got Elizabeth Hallelbeck's new cookbook "Deliciously G-Free" from the library primarily for the pot stickers recipe. I didn't think I would ever be able to eat potstickers again and I love them. However, before I ever got to the potstickers I saw the recipe for chocolate chip cookies. The ingredients were different from the usual cookie ingredients and I made them yesterday. They are good fresh but are superior right out of the freezer. I don't think I can give the recipe here because of copyright laws but the book is in most libraries if anyone is interested. First cookies I've had in a year.
The brownies I make also taste better if they are out of the freezer and just "zapped" for 20 seconds in the microwave on power level 3. Something about GF baked goods seems to be improved by both freezing and, for bread, toasting. The cookies don't get really hard in the freezer and soften just enough in a minute or two without zapping to be perfect for eating.
I know I'm not doing myself any good by continuing to eat sugar laden baked goods but I've reached the point where I don't care as long as I don't have any obvious reaction. I think I'm too old a dog to want to change unless I absolutely have to.

The King Arthur box mixes for brownies and chocolate chip cookies are good as well and best out of the freezer. Not as grainy as the Betty Crocker ones. They helped with the "pick me up comfort food" I wanted while transitioning and accepting my diagnosis.

Be sure to read the ingredients carefully. I picked up a box of Pamela's brownies and found soy lecithin in the ingredients list. When checking other mixes I found soy in many of them. For this reason I make my own flour mix and keep it in the refrigerator. When I want to make brownies I use that flour mixture. It saves a little time.

Toll House Chocolate Chip Cookies
These are my favorite.
2-1/4 c GF flour blend
1 tsp salt
1 tsp baking soda
1 tablsp xanthan gum
1/2 c butter ( GF/DF/SF earth balance..
1/2 c solid shortening (Spectrum)
3/4 c white sugar
3/4 c brown sugar
2 eggs
1 tsp vanilla
12 oz. chocolate chips ( I use Enjoy Life which are GF/DF/SF
Beat together butter, shortening, eggs, white & brown sugars.
Then mix in the dry ingredients.
I then roll in balls about walnut size and bake at 350 for 9-11 minutes on a cookie sheet..
