ooops, didn't see Polly's post before I spoke. It's good information. Always a good idea to check the glycemic index.

Thank you Jean, Polly and Leah for very helpful responses.

Jean - FWIW I think that because Dr. Bernstein has lived with diabetes 1 for 64 years, he has had to be extremely careful with carbs, so I suspect his recommendations about what foods to eat are a bit stringent for us who are seemingly dealing with "pre-diabetes". Knowledge is power, so he is a great resource as a starting point with regards to learning about diabetes and tailoring a proper diet!!! Thanks again for bringing his book to my attention.

I'll be curious to know how those of you dealing with the "carb cravings" do going forward, and would appreciate any recommendations on appetizing, low-carb meals. For breakfast today I had a scrambled egg with scallions, along with avocado and half an apple. It was actually quite satisfying. I think I've read somewhere that we should not eat fruit at the same time as protein. Any thoughts?

Fortunately, my new PCP has a diet approach to health, so I'll be interested to hear what she has to say when I go back to see her. I don't have all my test results from my visit yet - when I do, I will make an appointment.

Love,
Kari

Thanks for the suggestions folk,

I think I am going to continue to struggle until I get a space for just a few days when I can make sure I have oodles of paleo foods available and at least a fractionally reduced stress level. It's a busy period from now to 30 June at work, and I'm getting hammered. I am also living in my spare room as my main bedroom flooded during heavy rain in March, so the house is in total chaos, and I am arguing with insurers.

Sometimes I am sure it is physical hunger - my tummy growls, sometimes it is carb craving and sometimes it is emotional. I have also read that increasing the amount of fat you eat can help keep physical hunger under control, so will have to try that.
