Hey any thoughts on homemade sauerkraut? I am a kraut maker, and I have some in the fridge from before MC diagnosis. I do know the benefits of it, that is why I got a maker, and I used to make it with my mom, so anyway, I am trying to eat my way out of supplements, i.e. probiotics etc.
I know I will have to wait a bit before I eat it, still on Phase 1 SCD diet, and it is working, by the way.....still not back to normans, but probably working towards a number 5 on the Bristol Stool Chart. Here is a link to the chart, I find it helpful to know where I am and want to head towards. As we all do.
Homemade sauerkraut (IOW, unpasteurized sauerkraut) is generally a healthy source of probiotic bacteria, and most of us are probably able to tolerate it, as long as we don't overdo it until after our gut has some healing time. One of the drawbacks is that cabbage tends to cause gas, which can add to the bloating problems when MC is active. A good commercial substitute for homemade sauerkraut is Bubbie's Sauerkraut, which can usually be found in the refrigerated section of most health food stores.

I don't heat the kraut either as I have read that it destroys the probiotics. So, I know it will be a while before adding it.
Also, my scd diet is sort of modified because of your green flag on adding some rice and I do tolerate a baked potato, whatever works right?

Right now I am making some beet kvass. It is fermented beets, basically just chopped up beets, sea salt and water. You set it out to ferment and then when it is ready you just save the juice. It's like drinking sauerkraut juice only its beets. You get the benefit of all those good bacteria without some of the potential downside of eating the vegetable with all its fiber. Sandor Katz has written 2 great books on fermenting foods. The first is called "Wild Fermentation" and his recent one is "The Art of Fermentation". I own them both.

That sounds very good! I love beets, I have some growing in my garden. I don't think it will be banner year because indiana is in a major draught.

Those of us with mast cell issues should probably stay away from fermented stuff, at least that's what I've read. Even lacto-fermentation or kombucha. My kombucha is making plans to take over the cupboard because I haven't done anything with it in so long.

I really like the Sandor Katz Wild Fermentation book. My sauerkraut is long gone (eaten yum!) but I have 4 jars of the sauerkraut juice leftover in the fridge. The juice has probiotics in it. The jars get blooms after 3 weeks and I skim the bloom off occasionally. I'm putting a teaspoon of the sauerkraut juice into my water with teaspoon of my L glutamine powder and about an inch of coconut water for potassium. Sandor Katz talks about drinking the sauerkraut juice straight as a "tonic." It seems like that would be like drinking ocean water i.e. way too salty but adding a teaspoon of the sauerkraut juice to my water works well.
I'll let Tex or others chime in on the mast cell thing. It does not apply to me.

I don't think I want any part of the mast cell problem......
I am working the the diet, and making steady progress adding foods and keeping the flare ups away.
I feel for all my fellow MCers who also have to contend with mast cell issues.
