I hope that getting a diagnosis will help you figure out how to go about treating the problem. As Cory said, don't believe anyone who says diet doesn't affect MC. It does.
I can empathize with your dilemma about how to eat in China. I went to Thailand for a month is May, and I ended up not daring to eat any food that we didn't cook ourselves. I was staying with my son and his wife, and they are aware of my diet, and were extremely careful for me. Actually, I did eat one cooked meal out--stir-fried greens, and I stressed over and over that they shouldn't put any soy sauce or any other kind of sauce on it. They assured me they wouldn't, but since I talked to the fourth person who tried to understand what I wanted (language barrier!!), they didn't know what it was that I wanted, and I did end up getting D from it.
All that to say, my advice would be to get Entocort right away, and get it in your system and see if it helps you (it did help me within a week), and then take it the whole time you're in China and eat what they serve you. Then when you get back from China you can eliminate gluten, soy, dairy, etc. from your diet. I think it will keep your stress level down not to have to worry about every single bite of food you take.
I was an Entocort user and I think Martha has a great point. Unless you are doing extremely well at GF DF SF now--suggest get on Entocort asap. Take it during your trip and eat what you want on your trip and go GF DF SF when you return from your trip. Entocort will allow you to eat what you want with no worries. Within 3 days of use I had solid stool and within 3 weeks I had constipation. I didn't go GF until 6 weeks after I started on Entocort due to denial and I didn't go DF until 2-1/2 weeks b/f getting off of Entocort. This will greatly eliminate your stress levels. Work on your diet changes when you return from China.

Today was just a bad day, so I will keep this post short. It was bad not from physical symptoms, but from worry. I think my prior histories with cancer have just pushed me past the edge.
