So after numerous tests....and 14 long months with this disease....I can finally digest a few soaked nuts....Yea!

I've been soaking my raw nuts in water anywhere from 4 hours to overnight. I rinse them off. The cashews I find to be soft. The almonds are still kind of hard.

The paleo websites say to then dry them in the hot sun for 12 hours or in your oven at 170 degrees for 10-12 hours to roast them. I've been afraid to do this. I don't want to make the nuts too hard.

Usually I spread the nuts on the baking sheet and put them in the oven for anywhere from 20 minutes to an hour for 170 degrees. (If I left them outside the fireants would be all over them in my neighborhood!) I find the 20-60 minutes in the oven dries off the water and gives the nuts some nut flavor.

Then I've been adding raisins, (or chopped dates) and salt and making a trail mix. Is anyone doing anything different? Any spices you suggest I add? I can pretty much eat all spices.
I've thought of adding shredded unsweetened coconut but anything else you suggest I should add?
