I can't have almonds so I substituted walnut flour, ground on my grater. I used finely ground flax seed, didn't have pumpkin seeds, but had the rest.
I would add a little more salt, and possibly some raisins. This is definitely a substitute for those lovely bars I can't eat because they all have almonds or rice or corn or something. It's something to take on a trip, or out for the day. Slices well, and is great with earth balance soy free spread, some jam or anything you can have on bread. Wonderful breakfast food.
High, high protein, and very filling.
In my tabletop convection oven it bakes faster and on a lower temp. Took about 18 minutes on 330.
