I had pericarditis on top of colitis & gastritis & severe acid reflux to the point of throwing up blood - a lot sometimes. I don't have any of these problems (at least symptomatically). Got all my enzymes back....i can eat carbs and a package of milk and nothing happens.
I've been sick with all these stuff for nearly 6 years...I turned 30 now. So since i was 24 or so i just stayed home and took care of myself.
well now I went from eating vegetables and fish with some nuts and weighting (literally 42kg) to now eating everything and at 61kg But gluten gives me some kind of an allergy - i itch (not digestive problems) so does lactose....they both give me arrhythmia too(skipped beats).
During all that time i stayed from gluten milk + most packaged foods just vegetables chicken and some rice. Oh I also went through several treatments to get rid of my gastritis (with abx to kil the helico bacteria) although the bacteria did not show up on tests..i still went through a round of abx last year (a doctor here recommended one last year anyway as he said there might be other unknown bacterias) a year later i could eat drink even alcohol and milk (no bloating) and all the bad stuff u can think of. Prob coincidence who knows?
Never did I think the day will come when I could get out of my house and be productive and have alcohol eat like a pig and all of that. Today it seems it was all a nightmare and was never real...what i went through I mean.
But im tired of this bad diet (sugar, cokes , milk cookies, cakes and all of that) - I itch and get arrhythmia frmo them sometimes.
So i wanna go back to what i think from my experience (no research lol) is the healthiest diet: low carb, vegetables meat and lots of fat which i followed mostly for years before healing...except adding rice from time to time. I aged little during this time...I look 23 according to ppl ... no going to the loo issues whatsoever...no hemoroids ^_^...no pericarditis...no gastritis...my hair stopped failling or reversed a lil....it might be coincidence well I dont know what happened but just I still think this diet seems super healthy.
btw, im no longer in the usa, got tired of being sick so i went back to my ...well...perhaps not my country but second country. I'll probably go back to the USA next yearbecause i got accepted for a phd program in physics (will focus on medical physics hopefully). That's how healthy I am now ! I am able to study and all of that stuff i did great with all admission tests.

Thanks to tex and you guys too. All the advice I was given was very helpful and this forum enlightening to say the least. The world indeed doesn't know about this little forum...haha..where the secrets to a healthy life are hidden.
Now my question is about stevia and aritificial sugars, what do you guys think of it? does the stuff have harmful effects? what other things are harmful in a low carb diet that are not as obvious? spicies? what are inflammatory foods still present in a low carb diet?
Are you guys in low or zero carb diets able to eat outside or just cook at home? I mean speaking of gluten content from cross contamination, does it really matter?
