Budesonide or Mesalazine!?

I will go back to the 9 mg of Budesonide for a total of 3 months, since I am definitely not near normal stool yet. Or is it still safe to go on it for longer than that? If I only have one more month on the high dosage, I definitely need to figure out what's stopping me from reaching remission.
I will cut out the Rice Chex and almond milk. I know you told me this once before and I took it out for a while but ended up putting it back in because I didn't notice a difference either way, but it's best to be sure. I am getting to the point where I know something is continuously hurting me but there's not one thing that I'm able to pinpoint as triggering, since even on better days, I'm still eating the same stuff.
The olive oil I use is Pompeian imported organic extra virgin. It says it is "non-allergenic" but nothing that specifies if there is soy in it or not. Is this a safe brand?
I am still taking a multivitamin daily. I was taking Women's One-A-Day, as it says it doesn't contain soy, but I switched to Centrum Silver Women 50+ (I am 39 but the regular women's said it contains soy). This one does not say it contains soy, but it does have dl-Alpha Tocopheryl Acetate (Vit E). Is this safe? I know you also told me to take out multivitamins while in active MC, but I really struggle with that because I am afraid I am not getting the proper nutrients. I can't imagine just eating rice, potatoes, turkey, and chicken for months and not getting the other nutrients I need. I am also confused why they would be harmful? Is it because of all the ingredients at once? I am definitely willing to take them out at this point, though. If at the very least, do a trial period without them. I just want to do whatever I need to get better and don't want to waste an opportunity on the Budesonide by consuming the wrong thing.
If I don't take a multivitamin, should I take any other supplements or just none at all right now?
I am also thinking that I may need to do a trial period of only rice and meat (in case the potatoes are hurting me), or vice versa. Should I try to do this for 5-7 days? And then gradually try to add something back in? Would that be a sufficient time period?

After you're in remission you'll probably be able to tolerate them.
I don't understand why you're concerned about nutrients at this point. Most of your nutrients are going right through you anyway, as long as MC is active. The best thing you can do is to get to remission as soon as possible. Then, your nutrients will take care of themselves, because you'll be able to absorb nutrients again You can take all the vitamins you want, but they're not likely to do you any good, unless they're in the active form (because they'll go right through you). No cheap vitamins (such as Centrum) are in the active form.
It's good to take vitamin D, because most of that is in the active form (methylcobalamin), and it will strengthen your immune system.
Didn't potatoes test safe for you?

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Yes, potatoes were a safe food but my EnteroLab test was a while ago and I have been eating a lot of potatoes since then while the inflammation was still very high. Since I have been eating them so much, I thought maybe I have become sensitive to those as well? I thought I remember a post from you staying that you had developed new food sensitivities but I'm not real sure how it all works.
I'm just trying to figure out why I'm not getting better and I thought it might have to do with the foods I've been eating the most.

That new problem was soy (including peanuts). I've always eaten a lot of potatoes every day, including during my recovery. The "experts" claim that nightshades (including potatoes) will exacerbate arthritis. But the "experts" don't seem to realize that if you'll eliminate gluten and casein from your diet, you will eliminate "classic" arthritis. Then, nightshades should make no difference.
20 years ago (at the age of 58) I had arthritis so bad that I had constant severe joint pain, and on many days I had to use a cane to walk, because of bad knee inflammation. Changing my diet eliminated all that. Today my joints are still pain free and I've forgotten where I stashed that cane.
It's certainly possible that potatoes might be a problem for you, but they're a safe staple for the vast majority of us. They're a much better (and safer) source of carbs than the grains, IMO. But that's just my opinion.
