I am new to the forum and am concerned about weight loss. My results from Enterolab indicate that I am sensitive to all 15 tested items. Currently I am eating organic turkey, zucchini, and yellow squash, trying to start the recovery process. I read in an earlier post that olive oil and coconut oil are ok during recovery. I am using olive oil now and would like to add quinoa and amaranth to provide more calories since I have lost about 20 pounds—and I didn’t have any to lose. Is it safe to add small servings of these grains while I still have diarrhea (although it seems to be improving), or should I wait until things are more stabilized? Thanks for the opportunity to participate in this forum, and for your help.

Quinoa and amaranth should be safe for anyone. I'm guessing you've already seen the Newsletter published by the Microscopic Colitis Foundation discussing the weight loss problem associated with MC. Incidentally, quinoa and amaranth are not grains, and that may be one of the reasons why they're safe for us. They're seeds.
