I just found a recipe for Depression Cake in an article by Emily Jones on her blog at www.deludeddiva.com
Article is dated 6/22/09, and you can find it by going to the rest of the article by clicking onto the little continuation thingie at the end of the intro to that article on 6/22 about the hard times many people are going through now.
Many of us multiple intolerance people could easily substitute a gf flour blend for the wheat flour part, so Dee or anyone, which of the gf flour blends or alternative flours do you suggest we try first if we want to try this out? I have absolutely no idea what texture this stuff is supposed to have, so I couldn't even use one of the gluten free cookbooks that lists all the possibilities depending on the qualities you want the cake to have.
What does depression cake taste like anyway?

Could not find it on their site but sounds like a wonderful loaf cake we made for years and knew as "War" cake. Dark cake with spices and raisins and a really moist texture. Absolutley loved it.

1 cup rice flour
1 cup cornstarch or arrowroot
1 cup tapioca starch/flour
1 Tbsp. potato flour *not the same as potato starch
This will make 3 cups
Sounds like this would taste like a spice cake
Remember that GF flours are very bland, so I'd add 2 teaspoons of vanilla, also.

This blog is for women around 62 years old or thereabouts, and things they/we relate to. Having grown up in a city, I find it interesting, since it's about girls from a small town. I just follow their antics by reading the blog and learn a few things along the way.
Now, you and Dee having me really wanting to try this stuff. I used to really like spice cake, but haven't had any in years.
Dee, you really amaze me! Do you just do this off of the top of your head from all your experience with baking or what? This is an invaluable service.
Know what -- I have a box of POTATO STARCH FLOUR by ENER G that I need to use, but the name confuses me -- is this the same as potato flour? Thanks again!
