Buckwheat

Post by Delta »

Do any of you use it? I imagine the fiber might be a problem for some. I have come to love this stuff, very filling, never causes any bloating for me, has a pleasant flavor and is packed with lots of good stuff for the body too.

Also I went to a small grocery store in Concord CA. It is almost like I hit the lottery! They have everything you need if your gluten free. Shelf items clearly marked if item is GF, no need to examin every label with my magnifying glass (although I did inspect everything at home to be certain  ) cakes, cookies, breads, buns, muffins, hambugar helper type boxed foods, sauces, gravies, frozen pizza dough, just everything you can imagine. They do online sales as well (the name is Harvest House)

From now on I won't dread going grocery shopping! It will be nice to expand my menu a bit. I hate going to the "City" and it is a bit out of the way (60 miles RT) but I'll go once a month and stock up. I'm on cloud nine, finding this place, going out with my brother last week over three days and catching in excess of 100 or so rockfish, ling cod, halibut, sanddabs and flounder, oh and also bought my nieces 4H spring lamb at the auction yesterday. I need to go out and buy another freezer.

You obviously had a good week - everything seemed to be going your way.

I've never tried buckwheat - I suppose I should, though. A couple of years ago, on a shopping trip, I bought some quinoa cereal, and some buckwheat cereal. I tried the Quinoa first, and I was so disappointed in the flavor, that I never got around to trying the buckwheat.

Buckwheat is much better than Quinoa. I eat buckwheat cereal quite often.

my very simple recipe.

enough olive oil to saute:
1/3-1/2 cup onion
2 cloves of minced garlic
3 or 4 med-lg mushrooms sliced thinly, or not.

-----------------------
1/2 diced carrot
1 1/2 cup of gluten free buckwheat groats
3 cups water
pinch of sea salt, a little black pepper

saute onions garlic and mushrooms in medium sauce pan, when finished
add water grouts and carrot, bring to a full boil, top with lid and simmer for 12 minutes +/-

it reminds me of ric a roni.

I eat Arrowhead Mills buckwheat cereal all the time. It reminds me of Wheaties. I don't like the Kasha cooked cereal, though. I also have ground buckwheat groats (unroasted buckwheat kernels) to use as a flour in making pancakes, bread, etc. It's pretty nutritious and gluten-free. It's related to rhubarb and is considered a fruit, I believe.

So glad that you've found a GF grocery store nearby. It does change how you feel about shopping.

I have been enjoying home-made buckwheat pancakes. They are yummy. With a bit of xanthan gum it makes a lovely light pancake.

Also love the Orgran buckwheat pasta. Tastes just like regular wholewheat pasta.

I must be one of the oddballs since I cannot do buckwheat at all. Send me right to the loo. Loved it before CC and absolutely loved Kasha.

I haven't had it either but all the posts make me want to try it.

Delta, maybe you should put your recipe in the "kitchen" so it doesn't get "lost".

I think when I first went GF, I was confused that Buckwheat Waffles were considered GF...........It did say wheat after all.

All of the buckwheat waffle and pancake mixes and the frozen ready-made ones that I've seen include wheat flour in the ingredients.
