Hi everyone,

I've been away from the board for longer than I thought I would be at the beginning of the summer. It's been a busy one! I've tried to keep up with reading some posts, but I haven't had a chance to post.
Many warm welcomes to the newbies and happy birthdays to those I have missed.

To update you on my health situation, I had to have a root canal on the tooth that was bothering me. Finally finished all that up yesterday. I've also taken the plunge and cut all processed foods from my diet. I'm only eating things with one or two safe ingredients or whole foods that I prepare myself. I'm finding it really is not any more difficult or expensive (less expensive than buying GF goodies, in fact) to prepare foods myself--it just takes a little more planning. I'm hoping that this will bring me into remission eventually. On a day to day basis, I don't seem to get any better, but from a long-term perspective, I am definitely better than I was a year ago.

I finished my master's degree in English this summer and have decided to take a year off from school to destress a bit and work on my overall health. I've been really fortunate to get a position as an adjunct English instructor at a local community college. I'm teaching four courses, which is a full load, so I will be busy, but it's a good kind of busy.

Congratulations on finishing your Masters and on getting a full-time English teaching position in a college! Both are very difficult to obtain and you should be proud that you did it.

It sounds like you are on the right track with your approach to your diet.

I like your food strategy. I really believe that in the long run, that will definitely pay dividends.

Congratulations on your degree, and your teaching position. I also believe that taking a year to get your health issues under control, is a very sound plan. :thumbsup:

Thanks so much, everyone! I'm really looking forward to starting my new job in August and to having my weekends free again.

I think my new approach to the diet will definitely pay off. Fortunately, DH and I both like to cook. He's so excited that I'm not a vegetarian anymore that he's been grilling up a storm this summer, so I have eaten well!
