Hello everyone, just did two back to back vacations so haven't been on for awhile. Discovering the Soy connection has made such a huge difference in my life that I was so much more relaxed on these two road trips. I packed a cooler like Gloria did over the summer and bought a toaster oven and it literally saved me since several times I was stuck not able to eat anything at restaurants that family members had chosen (pizza parlors ect.) I would just go back to the hotel room and toast my own pizza on a brown rice tortilla and would then go to the restaurant and socialize with a beverage only. I only got glutened (or soy'd) once at Biaggi's restaurant in Iowa, probably cross contamination. I'm not complaining because before I knew all my intolerances, I was always getting glutened ect. Glad to be home but wanted to mention that I highly suggest a toaster oven for road trips and they are so inexpensive to boot!

welcome home Kathy---sounds like U did a fine job in keeping your digesting track in order~~~

Lou and I bought one of those refrigerators that kinda fit into a small RV----and plug it into a gadget that keeps things cold--
this way I pack yogurts---bottles of drinks---etc- so if we need a nice cold something I just reach back and we can keep traveling-
I even throw some fruit into that mini refrig (as I call it)-----
Of course now---thankfully-- I am free to eat as I please so it saves us from stopping here and there for some refreshments--

Nice to realize there are ways to enable us to enjoy an arduous trip without stopping every time for something refreshing--yet just to stop to make sure we stretch the legs and as usual *P* ----

Kathy,

It's good to hear that cutting soy out of your diet has made such a big difference.

A toaster oven does sound like a good idea, assuming that there's room to take it along.

Using a brown rice tortilla for a pizza crust is something I never considered. It would travel very well, too. Thanks for the tip!

Where did you buy the RV refrigerator? I'm seriously considering buying one for travelling. I don't think are regular mini refrigerator would work because it needs to be plugged into the car lighter.
