I am just wondering. Last of couple of days/weeks I still have some minor bowel problems no d or c but uncomfortable feeling. I have the idea coconut milk is causing it. I am surprised and not 100% sure. I will try it one day this week to take a glass on an empty stomach and just see what will happen. I was wondering does anyone else does have bad experiences with coconut milk. The can contains coconut milk and E224 (kaliummetabisulfiet in Dutch translated it will be something like potassium meta bi sulphite)
or is there another topic on this matter?

Harma, most coconut milk brands in the US contains guar gum made from guar beans, a legume, to make it have a thicker and more attractive texture. So those of us with soy intolerances might be sensitive to it. I found a brand of coconut milk that just contains coconut and water, nothing else. It has lots of little lumps in it and doesn't look as nice and smooth coming from the can as the milk that contains guar gum, but after it's heated up in cooking or stirred for use in making my smoothies, it's just fine.
However, it sounds like your band of coconut milk doesn't contain guar gum. I don't know if the sodium metabisulfite, used as a preserving agent, might be causing the problems. If possible, try to find some coconut milk that doesn't have it. If you have an Asian grocery nearby, they might have a different selection than the regular grocery store.
It's such a detective hunt to try and figure out our sensitivities! I just uncovered one a few days ago. Because of my vacation I wasn't drinking my usual herbal tea, a yummy orange, ginger, and peppermint mix. My gut actually was doing better on vacation than at home, but I didn't think much of it until I got home and suddenly I was having a lot of gas. Well, I traced it to my herbal tea and have seen some continued improvement now that I'm no longer drinking it. It can be so frustrating.....

Another thing to consider is where you buy your coconut milk. I did OK with coconut milk sold in the refrigerated section when it first came to the stores in my area, but I don't think enough people purchase it to keep it fresh. I noticed over time that even though the expiration date on the container was still a couple of weeks away, the milk was going bad within a couple of days of opening it. When it first came out, it would go a week after I opened it before it started getting a funny smell or taste. Either the store I go to isn't properly refrigerating it or the coconut milk just doesn't keep as long as the manufacturer's expiration date says it should.
I make a lot of my own "milks" now. It's pretty easy for most types, especially if you have a good strong blender. Take whatever you want to make milk out of, put it in the blender with some water (amount depends on the consistency you want) and give it a whirl. Then strain out the solid bits. Straining out the solid bits used to be a real bear. It seemed like whatever I used had a mesh that was either too fine or too coarse. Then I found a tip that said to buy the nylon or plastic mesh paint strainer bags from the hardware store. They work great and clean up easy too!

Are you using coconut milk as a milk or as a supplement? I am using organic coconut oil, eating it by the tsp.. as my research recommended it as treatment for MC and don't seem to have any problems with it except that it's like eating lard. I see you don't list rice as a problem food, could you use rice milk instead?

I recently made a Hawaiian coconut pudding and didn't have any reaction to it, even though the coconut milk had guar gum in it. I was surprised because I have been avoiding legumes.
It would seem that one is either intolerant to legumes, or they're not. However, many here are intolerant to soy, but not other legumes, so maybe it's a selective intolerance.

thanks all for the replies and sharing your experiences with coconut milk. Reading all your finding It looks like the coconut milk is not the problem. I bought a booklet on additive in foods (normally only listed with numbers in Europe with an E), it is possible that the additive causes the problem. One of the mentioned side effect is stomach/bowel problems. So that could be. The whole tone of the booklet is, at least for me, a bit over the top. Lots of things, even vitamin c (ascorbic acid) is suspicious and can cause problems. Probably for this and lots of others is it true, only in larger quantities. But anyway, useful to have a guide like this.
And also make you reconsider what kind and how much stuff is added to our food. Not all is bad, but I will pay more attention to it from now.
