If it would only spill over to hospitals and assisted living and nursing homes...........

I certainly agree - there has to be a tremendous need for special diets in assisted living and nursing homes, and I know from experience, that hospitals are woefully short in addressing the issue. As this trend expands across the county, in the colleges and universities, surely the experience gained there will eventually be utilized by other institutions.

We're living in a unique period of time, as we rediscover that not only does what we eat matter - but it appears to totally determine our ultimate health and well-being. Our grandparents knew that, of course, but somewhere along the line, we got caught up in the "processed food" and "convenience food" fads, and we lost sight of why we eat food in the first place. We learned to eat junk food, and we allowed it to replace "real food" in our diets. Now, we're paying the price, and we're having to relearn how to eat.
