And dying in your beds many years from now, would you be willing to trade all the days from this day to that for one chance, just one chance to come back here and tell our enemies that they may take our lives.... but they'll never take our FREEDOM!!

Hi Gabes;
I somehow missed your announcment of your promotion, so, somewhat belatedly... WAY to Go, Girl!!
To answer your question re: my stress and June 30 year end as opposed to Dec. 31st... I work in the Literacy field and we follow the school year which ends at end of June here. All my final reports, strategic planning, wrap up celebrations and year end-assessemnts for learners, conferences, grant applications for next year and year end meetings all happen around this time of year. Plus I did a tutor training this weekend, a volunteer appreciation event two weeks ago and I still have 3 programs running!

it was awesome! WE saw Robin Hood *drools at the thought of Russel Crowe* it was so good. My hubby didn't care for it but it was nice he went with me :)
Joe, here's one of my faves for having food around for a few days. I buy not-fed-any-bad-stuff chicken, and use whatever veggies I have around. My local stores always have a section of reduced price veggies, marked down really cheaply because they're no longer perfect looking, and they work well for soup. You can adjust the amount of chicken and veggies.
There's something about chicken soup!
3-4 chicken backs with leg attached (but really any chicken will do)
Water to cover the chicken
6 peppercorns
bay leaf
Pop this lot in a pan (the water should cover the chicken pieces) and simmer for a couple of hours. Strain and you have chicken stock.
Strip all the meat off the chicken bones.
Take the stock and put back into the pot.
Add some chopped up veggies - I use carrots, zucchini (courgettes), mushrooms, shallots, sweet potato, asparagus (when it's on special) (I can't tolerate celery, peppers, or regular onion), but pretty much any veggies will do.
Some gf pasta or some rice (cook rice separately if you can so you don't get 'scum" in the soup.
Herbs of your choice.
Salt and pepper to taste.
Simmer for 1-1.5 hours.
(The liquid will thicken up)
Sorry to hear that contract got off in time - for a minute there I though you might get to visit me!

PS: Not able to post much at the moment, work is nutty and I have the in-laws staying with us. But do I read when I can - generally every couple of days.
