Soy-free almond milk and coconut milk

I saw a couple of posts about Almond Breeze containing soy lecithin. Well I just bought and LOVE Silk brand's new PureAlmond milk. It's made with sunflower lecithin and is free of all the major food allergens. I found it at Harris Teeter. I also LOVE So Delicious Coconut Milk Beverage (purchased at Whole Foods). It has a fairly high fat content, but it's good coconut fat, and I need it. I don't miss milk at all!

Yes, there are many nutritious alternatives to milk. Some here also use Hemp milk. I've made my own rice milk for quite a while. I'm experimenting with making almond milk, but I have used Almond Dream in the past. The disadvantage to making your own is that you don't get the additional vitamin fortification, but the advantage is you can control the ingredients. I can't handle carrageenan in the Silk milk, for example. Thank you for letting us know about a few more non-dairy products.

Zizzle, I've tried many different brands of alternative milk and also LOVE Silk's PureAlmond milk (plain not the vanilla); it is the only one I drink and use in my recipes and it doesn't have carrageenan in it either. Our store (Krogers) cannot keep this on the shelf. I actually buy two at a time so I don't get caught not being able to buy it. I would love to experiment in making my own as Gloria has, but simply don't have the time right now. Ginny

Hmm. I can't locate where I read that Silk Almond has carrageenan in it, but I'll take your word for it that it doesn't since you've got the product. I know Almond Breeze has it and Almond Dream doesn't. Does Silk Almond have guar gum or some other ingredient that may be suspect?

I've made almond milk from scratch three times now - once with the skins on, and twice after blanching and removing the skins. I must say it's very creamy, smooth and tasty. I don't add any sugar because it doesn't need it. I use it in pudding for a creamier texture and tried it in cereal this morning. I use the pulp in muffins and in quinoa pudding, and I don't need to add any extract for flavoring. I can't use vanilla or cinnamon and almond extract is as expensive as vanilla. Overall, I'm very happy with it. It's much creamier than Almond Dream. I think they must water it down quite a bit.

It does take a little time to strain it, but otherwise it's almost easier to prepare than rice milk. I understand if you don't have time to make it. It's great that there are prepared alternatives.

Gloria, that's the problem with a lot of alternative milks, they have carrageenan or guar gum or both. No this one does not, at least at the last time I looked at the ingredients. It does have the sunflower lecithin as mentioned. This is actually refrigerated and not on a shelf. Honestly, with all my intolerances this is the one milk I can drink and enjoy without a problem. I now get cravings for a glass. It also comes in vanilla, but I like the plain. Ginny
