Thanks for sharing your good news. I have never heard the expression "Norman", and can only imagine what it means:). I'm like you, afraid to get too excited when feeling better - I'm glad you had the courage to share your news with all of us!!! It sure sounds like you're doing all the right things - I will definitely try Outback for their gluten free menu - especially the desserts:).

Less "norman" today... but I guess I gotta take the good with the bad. Still on GF, DF, SF though. Can't wait to see my Enterolab test results...

Hi Rich:

Yes, it will be very interesting to see which foods, if any or all, you show an intolerance to on the tests. I would imagine quite a few, with your responding so well to both diet and medication.

Keep up the good work!! Re: the less than "norman".. there are so many hidden sources of these things in our foods, it is quite possible that, despite being careful, you may have accidently ingested one of the evil three...

I have no idea what is in the bread that you are eating, but since you mentioned Ezekiel Bread, and they specialize in bread made from sprouted grain, I thought that I should mention that, though it is sometimes incorrectly promoted as gluten-free, sprouted grain, (wheat, rye, and barley), is not GF. Sprouting does indeed lower the gluten content, since the enzymes released during the sprouting process not only convert the starch to sugar, but also allow much of the storage protein to be used up in developing the sprout. This is an incomplete transformation, however, so not all of the gluten is "removed".

I'm not saying that this the cause of Norman's departure, but I thought that you should be aware of it.

Tex, thank you for posting about this. When I read about Eziekiel bread in this thread , I remembered that I had seen some frozen in our local supermarket so immediately checked it out and was disappointed to see that it contained wheat, etc. (A lot of products I read about are not available in our little town so I am always looking for alternative foods that are.) I didn't know about the sprouting process and how it affects gluten content. Good info to have.. thanks again.

Bingo... I mean about the Ezekiel bread especially. That must explain some of the "less than norman" days lately. But I guess I should expect some ups and downs regardless.

Someone (whom I formerly trusted as a self-proclaimed health food guru) told me it was Gluten Free!!! So, instead of reading the label, like I have been doing on EVERYTHING else, I simply assumed this person was correct.

Boy was that stupid on my part!!!!!!!!!!!!!!!!!!!!!! I know better than that. Maybe I was just hoping that it was gluten free. I just bought another loaf today!

I am disappointed because it tastes so good (no wonder). Looks like I need to find an alternative for my bread craving. Any good store bought suggestions?

Thanks, everyone, for calling me out on my error. These are the times where this group really shines.

Now, I have taken a likely to Pamela's pancakes. I guess I could make some bread from that. I haven't seen any "already made" Pamela's bread, but then again, I live in a small town with little to no variety for people who are trying to eat correctly.

The three brands of GF bread that seem to be the closest to wheat bread, (in terms of texture, flavor, mouth feel, suitability for making sandwiches, etc.), are Gluten Evolution, (formerly Manna from Anna), Udi's, and Kinnikinnick. Anna's bread is available ready-made in only a few select locations, (they bake it on site), but the mix is available in numerous locations, and over the internet, (direct, in several versions, for differing degrees of food sensitivities - they even offer a yeast-free version), but Udi's and Kinnikinnick are available as ready-made loaves only.

Don't feel like the Lone Ranger. Trusting others, and/or not reading labels carefully enough, are the main reasons why so many celiacs think that they have a refractory form of the disease. Most of them are unintentionally ingesting gluten, and the rest have undiagnosed microscopic colitis, so they have additional food sensitivities.

I use Pamela's Bread Mix and Flour Blend and bake my own bread. I bought a like new bread maker at a thrift store for $8. The no stick pan inside was very clean so no worry of contamination. I like the end product very much.

Hi Rich, its good to hear your progress, although as you ave noted it can be full of ups and downs. I found it took a good 3 months for things to stabilize that's of course if I did not have and gluten of soy. I am sure the Enterolab results will be helpful.

I just picked up at Whole Foods market Pamela's pancake mix and had that for breakfast today. It was great! I have not had any bread like products since April. The maple syrup (real) that I had with it seemed to do OK as well.. That was a really good treat today.

Its amazing I cannot purchase or eat any food that I do not read the label on. I never used to do that before all this. I had a nice lady comment to me in the store how wonderful it was to see someone wanting to know the nutritional content of my foods, as I was reading every label before I would put it in my cart. At the time I did not feel like going in to the details of gluten, soy etc...

I'm so glad that Norman and near-Normans are becoming regular visitors! It looks like Entocort may be a winner for you. Are you still having side effects from it, like dizziness, etc?

Regarding my side effects, I had a really weird episode last Saturday and Sunday. My wife took me to the ER Sunday and apparently I couldn't remember my birthday or even what day it was, and my right arm was numb and my abdomen was really sore. Honestly, I don't remember anything that happened that day. My wife told me they CT scanned my head and checked my heart, drew blood, etc. They were apparently worried about a stroke. So they called my doctor and reached his associate who told me to switch to Lialda (sp?). I felt like everything had just built up to my worst day. I did stop Entocort for a day.

But Monday I felt so, so much better and I am just wondering if it was an effect from some imodium I took and my diet starting to kick in (the perfect storm). Tex had mentioned he had problems with imodium, and it seems that I have become more sensitive to it lately too. It makes me so goofy and incoherent, even when i take 1/2 a pill. Strange.

So I decided to stay on Entocort for a while longer because I do think it is helping while I get the diet under control. I am just trying to leave my former "emergency drugs" alone. Which is a hard thing for me to do due to my travel schedule. But Lialda will be my maintenance drug eventually it seems... I really don't want to stop Entocort so soon.

Joe, I learned a valuable lesson about not reading labels, and the irony is, I am a reader. Go figure. Never again. Thanks for your support! How are you doing? Dealing with this and Chrons... no one deserves that.

Kari, make sure you get the chocolate brownie without the whipped cream and toppings at Outback. They serve it warm, and it is very good. They ASSURED me it is gluten free. But since my recent lapse in reading labels, now I wonder... The waiter actually asked me all about Gluten and what it does to me when I eat it. So, I became an evangelist. And he listened intently.

Wonderwoman, I love raw carrots... Not another food off my list?? :) But you are most likely correct. And you know what, I think I am in Phoenix in a few weeks again (Oct 13 - 15th so far). So yes, I would be willing to meet you (dinner would be easiest). I think I am in Tempe actually. Contact me as that time draws near or I will forget. I just ordered a bread machine, which is really funny because I went through that "fad" 20 years ago. Now, it seems to be a necessity. Gonna become a baker.

Tex, as always, thanks for being the consummate summary expert on all of this. I am a fact and science driven person, so when you bring up the data behind the symptoms and the effects, I feel very assured that I am heading in the right direction, even when, it seems, I make some poor choices along the way. Keep up the most excellent work!!

So just so summarize where I will be over the next few weeks, if any of you are in proximity... I will be in Windsor, CT next week, Baltimore (actually U. of Maryand the next week at the beginning of the week), then on the 29th I fly to San Fran to end up in Berkeley. Then Gibbsboro, NJ from Oct 3 -5, then Indy Oct 10 -12, then Tempe Oct 13 -15, then Oklahoma City the following week... Would love to meet any of you if schedules permit, etc.
