What is your reaction when you eat gluten?
If you have been gluten free for a while, and then accidently eat something with gluten in it, what is your typical reaction?
I haven't eaten any gluten in over 8 years, to the best of my knowledge, but the post at the link below, describes my reaction in a final test, during an oat challenge that I did 3 and a half years ago:

I would guess that my reaction to oat avenin is very similar to what my reaction to wheat gluten would be.

With gluten, I don't get pain, but do get D. within 6 hours and get major brain fog/fatigue. With casein, I get huge belly gurglings and D. within 1-3 hours. And with certain other things , mostly unidentified as of yet, (but one for sure is quinoa), I get very sharp pains and stomach discomfort about ten minutes after ingesting, which last a couple of hours if I don't take something like Physeme for them.

for me - Gluten
Tummy grumble and discomfort within 30 mins to an hour
D about 20 mins later
2 days of joint aches and lethargy, foggy brain
for things like Dairy/Soy/Yeast
tummy grumble and discomfort 2 hours after eating for long period
discomfort and pain in the colon
next BM is very soft and smelly
soft smelly BM's for about 12 hours
2 days of joint aches and lethargy, foggy brain
most of these symptoms are related moreso to the leaky gut than direct to MC
but each MC flare means that it is taking longer to heal the leaky gut issue

Rich,
Gabes post brings up an interesting point - the effect of the leaky gut syndrome, on our symptoms. The oat challenge that I described was done after I had been in remission for about 3 years. Therefore, I no longer had a leaky gut, since it had had adequate time to heal. Because of that, the only significant symptom I had due to the oats, was D. If I had done the challenge right after reaching remission, (before my gut had adequate time to heal), I would have had the achy joints, brain fog, etc., that she described, because I had all those symptoms during my initial round with MC, (before reaching remission).
That gives you an idea of how much easier life can be, after you achieve remission. Even if you accidentally slip up on your diet, the reaction symptoms are not anywhere near as severe as they are before your gut heals.

Although I can eat some gluten while on entocort.. if I have a reaction to any food.. it happens almost immediately. My husband was amazed when I was first diagnosed that I would leap from the table and dash for the john.. often not making it there in time! He would ask how that can happen when for him digestion takes hours and hours..LOL
