The government, (USDA's Agricultural Research Service), in it's infinite wisdom, (and it's even more infinite bankroll, thanks to all us suckers - AKA taxpayers), is sponsoring research to promote the use of MSG as a dietary aid, (to reduce obesity in this country).
MSG is doubly appealing to them, because it can be used as a salt substitute, and the powers that be, are clearly on a dedicated campaign to wipe out the use of ordinary table salt in this country. After all, since it's no longer considered polite to sweat, we shouldn't need any salt.MSG has long been known to enhance the savory quality of foods and promote a positive emotional response (pleasantness) of eating. Regularly including MSG or foods naturally high in glutamate may help people to improve the quality and amount of their food intake, yet maintain the emotional and pleasurable qualities of eating.
The research is expected to add to the growing base of science around umami, widely accepted as the fifth basic taste in addition to sweet, sour, salty and bitter. Glutamate, an amino acid naturally found in many common foods such as tomatoes, cheese, and cured ham, is considered the purest form of umami. Recent research has identified umami receptors on the tongue. Providing a savory taste of its own, umami also enhances and balances the sensory experience of other tastes. MSG, the sodium salt of glutamate, improves the palatability of foods and has been widely used as a flavor enhancer for more than a century, initially in Asia and later globally. Significant research documents the potential value of MSG as an aid in reducing dietary sodium.
OK, I admit to being an ignorant old county boy, but I fail to see the logic here. They're going to fight obesity, by making food taste better.
And they're going to replace ordinary salt, with another salt that has at least an equal potential for harm, and probably a greater potential, truth be known.
Also, note that virtually all foods contain some MSG, but the common foods that naturally contain significant amounts of it, (such as tomatoes, cheese, soy sauce, etc.), and additives that contain MSG, such as hydrolyzed vegetable proteins, autolyzed yeast, hydrolyzed yeast, yeast extract, soy extracts, and protein isolate, tend to cause problems for many of us, especially while our MC is active.

It's interesting to note that in the past, there have been numerous studies to investigate whether or not MSG causes obesity, but the results have always been inconclusive. Now they're setting out to prove that it reduces obesity.
