I scored 11 for soy through Enterolab at a point when I seemed to be very reactive to everything. I never felt great after a tall glass of soymilk, but it didn't cause major MC flares either. So I went largely soy-free for a few months, but have been adding GF soy sauce products, dark chocolate with soy lecithin, things cooked with soybean oil, and a few edamame by accident in a stir fry. Overall, I'm noticing no response to soy. I don't plan to start drinking soymilk again or buying tofu, but I'm not afraid of it anymore either. I hope the course continues to improve as I consider adding more foods in.
I also started L-Glutamine yesterday and had no adverse reactions either day, so I'll keep it up for a while and see what happens.
I travel to Denver with my colleagues this weekend and we have reservations at several nice restaurants, none that advertise a GF menu. But I hear Denver is a GF friendly town, so wish me luck! I'll be at the Convention Center, so if anyone has restaurant ideas in that area, let me know. I'll be packing lots of GF/DF bars!

Zizzle,
If you don't mind driving out of town, one of our members, (kscolorado), and her husband, own two restaurants in Colorado, that cater to food intolerances and allergies, and I believe they are both located in Manitou Springs. She apparently has both MC and celiac disease, and she's a patient of Dr. Scot Lewey, (one of the top MC and celiac docs in the country). The first one offers a classic dining atmosphere, while the second offers a fine dining experience:

The staff at her restaurants definitely speak the language of "gluten-free". You can e-mail her if you have any questions. If you get to see her, please tell her "Hi!" for us.
Tex
P. S. you can send her an e-mail by clicking on the e-mail link at the bottom of any of her posts in this thread:

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Thanks. My schedule will be very busy and I won't have a car, so those options are out. I have to stay confined to the downtown/convention center area. I see Udi's has a cafe downtown - I might have to check it out.
