When I made my own almond milk, I realized why they add guar gum and other gums to liquids. It makes the product thicker, fooling the consumer into thinking that they are getting a more substantial product. My homemade almond milk is very creamy and as thick as regular milk. I don't add anything to it, no sugar, thickener or flavoring and it is very tasty. Almond Dream is thinner, which tells me that it has more water than it should. I suspect that Silk Almond milk would be thinner if they didn't use guar gum. Ditto for coconut milk.
