When I made my own almond milk, I realized why they add guar gum and other gums to liquids. It makes the product thicker, fooling the consumer into thinking that they are getting a more substantial product. My homemade almond milk is very creamy and as thick as regular milk. I don't add anything to it, no sugar, thickener or flavoring and it is very tasty. Almond Dream is thinner, which tells me that it has more water than it should. I suspect that Silk Almond milk would be thinner if they didn't use guar gum. Ditto for coconut milk. As Linda wrote, the real product is always better, but it takes more time to make.

Wow, Linda. Sounds to me like you could easily live off the grid! Are you?

Sadly I can't stand up for more than five minutes before my back makes me sit down again, so I do the least amount of cooking humanly possible. But back in the olden days I subscribed to Mother Earth News, did the garden thing, canned and so on. My X (the first one) was a produce department manager and brought home all the food he could not put out for sale but was too good for the pig farmer that came by every day for the really bad stuff. I bought a food dehydrator and saved everything I possibly could - you name it. LOL - in 2007, the last time my late father went to his cabin he used carrots I dried in the early eighties in his stew! He said they were fine :roll:
