And it arrived yesterday. Though the selling outlet did not show it contained guar gum, it actually does. However, I could very well be able to tolerate it.

Anyways, this is the real deal. 400 calories in 1 cup. It has the consistency of spackle (kind of gross).

But I drank a cup for a quick 400 calories and it wasn't too bad, though I am sure my heart was complaining.

Going to follow Linda's course of action and mix it into smoothies for weight maintenance.

I hope I can tolerate because the high calorie count is what I need right now.

Guar is a legume, but I believe fewer people are as likely to have trouble with it, as xanthan gum. We grew a few thousand pounds of guar, several years in a row, many years ago, but the weather was always uncooperative, and kept us from getting a decent yield, so we had to give it up.

A new store opened just down the road from me--Chuck's Produce and Street Market http://www.chucksproduce.com/ and I went shopping there today. I found Native Forest brand items, Pamela's Bread Mix, and other food items that people have talked about on this forum that I had not seen before. It seems to have more variety than either Whole Foods or Trader Joe's, and the prices fall for the most part between Trader Joe's and Whole Foods. That's kind of ironic because it is situated between Whole Foods and Trader Joe's on the same street.

Apparently, it is not a chain, which surprises me because it has to have big money behind it. Just curious--has anyone else seen a Chuck's like this in their area?

As someone new to this whole thing, I really appreciate people giving brand names of stuff they buy, and why.

I agree Marliss, it is so helpful to have people mention brands or ideas or things they use. I am constantly reading something on here and then running out to look for it to add to my diet.

I just made some coconut pudding from coconut milk. Can you tolerate cornstarch? If so, I'd be happy to post the recipe. It has 267 calories, a real calorie booster, and tastes pretty good.

A lot of South Asian food uses coconut milk. If you don't care for curry, you can still use the coconut milk as the liquid in which to cook meat or vegetables, and just use the spices that you do like--ginger, garlic, onion, etc. I can give you a good chicken curry recipe, if you want it.

In carribean parts of Latin America, white rice is made with coconut milk. It is often served with black beans. I love it - last had it on the carribean side of Costa Rica. I often cook my rice and quinoa with 1/2 water, 1/2 coconut milk. That's one great way to add lots of coconut milk and calories without hardly noticing the flavor. I also do all my sauteing in coconut oil - stir frys, searing meats in a cast iron pan, etc. It's better for high heat cooking than olive oil, and better for you than canola, safflower, etc. I also love SoDelicious Coconut Milk beverage but I get a little nervous about the Xanthan Gum it contains. From what I understand, Guar Gum is not a problem at all.
