Feeling stupid for being mad

Many here don't tolerate chocolate, some because of the soy lecithin it contains. Could be the caffeine or other irritants too. I've never been able to tolerate coffee -- it sends well people running to the bathroom too. But I can drink plenty of brewed caffienated teas with no trouble. I love earl grey and fruity white teas. I can eat dark chocolate too (including Treder Joe's). It's been my salvation. Whenever I'm feeling angry or depressed that I can't partake in yummy desserts or treats, I break out a square of dark chocolate and it makes it all better.

Regarding the baking discussion, I am a non-baker. I see people in the kitchen as either chemists (bakers) or artists (people who can throw dinner together with no recipe from whatever is in the fridge). I am an artist, my husband is the chemist. I recently went to see a dietician to get advice about my new GF/DF diet. She had high expectations that she would be able to give me give me serious healing advice. But after she took home my food diaries and a list of my staple foods, she said there is nothing she would change. She said I was eating mostly whole foods (very little processed, commercial GF treats), plenty of protein spread throughout the day, multiple small meals, adequate vitamins, adequate fruits, vegetables, nuts, etc. I was stunned. I so expected a lecture.

Now I have some pride in how I'm feeding myself. I haven't eaten this healthy in years, so I don't want to go backwards by trying to replace all the junk food I used to eat with GF varieties. As a treat, yes, but my day-to-day diet revolves around eating homemade foods close to their natural state (with lots of seasonings added :smile: ). The non-perishable processed items in my cupboards are dwindling as I learn to eat more fresh foods. I'm learning to see food as nourishment for my body, instead of a past-time or an outlet for my emotions. But I do have some GF baking mixes waiting for me to break down and try them. I plan to bring them to my in-laws for Thanksgiving where the temptations wil be so great.

Hey Rich! I asked my dad about the Denver airport, and he said that both Denver International and Lowry AFB are built on rock. Cheyenne Mountain, where they hollowed out the mountain and built in it, is in Colorado Springs. He said it's pretty amazing, going in this mountain and seeing whole buildings under there. It's near impregnable--for example, the portal doors weigh 600 tons (not lbs.) each. It is used for the N. American early warning system and some other sophisticated stuff.
