To add to your "stranger things have happened" comment; I ate some regular, gluten-loaded pizza with cheese early on when I was seeing the first GI doc who later ran the hospital GI dept; he was horrified when I told him what I had eaten and what had happened. I had been having 15-20 D episodes a day at that point, but the pizza gave me a rest for at least half a day. Pizza is not junk food for some of us.
Weird about the gluten; some bread can make me crampy and cause me to be in the bathroom 15 minutes after eating it. Other breads (and sometimes crackers) are just fine with my gut. I think it just depends on what they add to the basic recipe. I'm good with some homemade breads. Maybe I should get a used bread machine and try to make my own.
