Since I'm new, just wondering, as I don't think I want to go through all of that testing, had rather keep trying this GF diet first, get tested at Enterolab, etc. What would make a difference if one knew? I may be missing something here about knowing for sure.
I view it the same way you do. I'm pretty sure that I'm a celiac, but my doctors never even tested for it. I wouldn't eat gluten if I were starving to death, (because it could only make the situation worse), but many/most people don't view gluten the way you and I do - they're addicted to gluten, and they are really attracted to it, (similar to alcohol for an alcoholic and nicotine for a smoker). A few will use any excuse they can dream up to rationalize why they should be able to eat it. That's why so many celiacs cheat on their diets - the stuff is addictive, and we tend crave the foods that we are intolerant of. Fortunately, due to the central nervous system damage, and brain damage, that the gluten left me with, most of my neurotransmitters and dopaminergic neurons are so fouled up that I don't crave gluten anymore. I guess I'm just lucky.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
