I was so excited the other day to find a trail mix that contained only my safe foods. It's called Cape Cod Cranberry Mix by Woodstock Farms and contains: raisins, dates with rice flour, cranberries (cane sugar and sunflower oil),walnuts, apples, and coconut. It is processed in a facility with gluten, dairy, soy, etc., as are so many commercial products.
I started thinking about how different each of us LEAPERS is with regard to specific sensitivities, and how my trail mix probably wouldn't be safe for anyone else here. Then I had a "D'OH" moment.
I know you creative cooks are laughing at me right now for "discovering" something so obvious, but for me it was a revelation. First of all, trail mix is so easy to have on hand for a snack - especially when on the go. Secondly, it is much fresher this way. I have always noticed how stale the commercial trail mixes seem to taste. And lastly, we can minimize those impurities that are so often found in commercial products, even those that appear to be safe.
