Good question. They way I see it, as long as you are steaming or roasting the vegetable to death, you are retaining most of the nutrients. Boiling may leech more vitamins from the vegetable into the water.How much nutrition is in "overcooked" broccoli, or any veggie for that matter?

I DO know that carrots actually release more of the nutrients when lightly cooked. This was told to me by a doctor with expertise in nutrition. Cooked tomatoes release more lycopene than raw ones. This has been widely publicized.
Tomatoes (which I LOVE) are out for me because of the acidity. Maybe one day, when I heal.
When I get onto more veggies I will roast them. Except for broccoli I like them roasted better than steamed anyway. I love F&V and am severely deprived without them, but I need to get this under control.
My back pain is more than enough to deal with.
