Sheila, My cholesterol has also gone down and my triglycerides dropped 50% from what they were before I developed LC. I think that gluten, and possibly grains in general, contributed to my increased cholesterol numbers. Before I became ill I ate red meat maybe twice a month and stuck to chicken, turkey and fish. I ate enough oatmeal to choke a horse and did moderate to intense exercise 4-5 times a week. Yeah well, I still ended up on Zocor after 3 years of trying to reduce it with diet. Then I became ill with my first huge flare and stopped the Zocor. I also stopped gluten and dairy, then later soy, and on my next lab tests my cholesterol had dropped noticeably even though I eat more beef now than I ever did before.
So I no longer believe that meat contributes to cholesterol production. I think there are hereditary factors and I think my sensitivity to gluten added to it. It's hard to argue with those numbers.
