Happy Thanksgiving
Hi everyone, I just wanted to say a BIG THANKYOU to all of you for getting me through the past year. When I look back at where I was a year ago and where I am now, it is a world of difference. Without you I never would have known that I needed to go gf and I would have never known about Enterolab where I found out I have other problems. Thank you for all the great information and moral support, especially you Tex for going the extra mile(s) in explaining things, digging out information, and helping through the rough times I am doing great right now following a gf, df, sf, and eg diet and using D-Mannose. (I posted some information about that on the Treatment Board.) I've gotten very creative with cooking with Dee and Gloria's help. I don't have a problem with corn, so I've been using masa for breading and I make tamales for Christmas which were gluten-free to begin with. I'm experimenting with coconut milk in recipes and I'm going to see if it will whip up for a topping on pie. (Dee's probably already figured this out.) I just want to thank all of you who posted replies to my questions and led me through this wilderness, something the medical community has yet to offer. You are all wonderful and I hope you have a wonderful Thanksgiving. Love, JoAnn

JoAnn,
Thank you for writing such an inspiring post. I hope your remission lasts forever.
Barbara is right, of course - you did all the work. All we did was to answer a few questions, and cheer you on. You won the race, by your own hard work and perseverance.
Love,
Tex

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Have a great Thanksgiving, too, JoAnn!
It sounds like you're learning new, creative ways to cook. As Tex and Barbara mentioned, you've done all the work - we've just been the coaches. Keep us posted on your continued progress. We always love to read about other's successes.

You never know what you can do until you have to do it.
