Satsumas are citrus fruits similar to a tangerine but sweeter. They are available beginning in the fall and throughout winter. Use firm pears, such as Bosc, so they hold their shape during baking. This dish is versatile and can be served for breakfast, as a side dish or for dessert.
4 firm, ripe pears, peeled, halved and cored
1 cup fresh cranberries
2 satsumas, peeled and segmented
½ cup water
½ cup sugar
¼ cup maple syrup
2 tablespoons cider vinegar
¼ teaspoon cinnamon
¼ teaspoon ground ginger
1/8 teaspoon ground cloves
Preheat oven to 350 degrees. Place pears, cranberries and satsumas in a 9 x 13 baking pan, filling cavities of pears. In a small saucepan bring remaining ingredients to a boil over medium high heat. Pour over fruit. Cover with foil and bake 45 minutes or until pears are cooked.
